Harvesting

Harvest from late November to early December.
Harvesting works are all done manually.

Peels and seeds remove from every single fruit manually at the factory.
 

Drying Technology

Dry with a special technology at low temperature .
1.3kg of Yuzu powder is made from arround 10kg of fresh yuzu.

Using the special drying technology, Fresh fruits are dried at a low temperature arround 40℃.
Therefore, the ingredients of yuzu, are almost never damaged in the process.


Japan, Shizuoka Prefecture's special product "Kawanehon-cho Yuzu"

Kawanehon-cho has been known for a long time as a producer of Kawane green tea, but yuzu was also popular since few decades ago.
Yuzu fields are spreading around the mountain slopes overlooking the Oi River.
Annual production of several tens of tons is top level in not only in Shizuoka Prefecture, but also in the central region of Japan.
The products are shipped throughout the country to the fragrant Kawanehon-cho Yuzu,
focused on the "Fujinokuni Kawanehon-cho Yuzu Cooperative".

"Sabinene" which is an aromatic bicyclic monoterpene,
is detected from Kawanehon-cho's Yuzu in Japan

The aroma ingredient “Sabinene” which has an healing effect, is detected from Yuzu Kawanehon-cho.
Sabinene is also found in many cypress and other conifers, and the scent refreshes the mind.
This is the first time that Sabinene has been detected in YUZU produced in Japan.
It is thought to be one of the rich fragrances of Kawanehon-cho yuzu.
